Val had suffered for 12 years with a lactose intolerance and she asked the chef to make a few of the cakes dairy free. He produced these in time for the Bakewell Food Festival at which the Because I Like It cafe had a stall. The dairy free cakes sold out first. So many visitors said that they were both gluten and lactose intolerant and were thrilled to find these tasty, freshly baked cakes.
Therefore, the decision was made to make all of the cakes, apart from the Bakewell tart which had won the awards with butter in both the pastry and the frangipane, dairy free as well as gluten free. This was a massive hit.
